Abstract： With the rapid development of China's agricultural product processing industry，quality and safety management is facing the pressure of multi-subject and multi-link collaboration and risk prevention and control. Information traceability，as an important means to enhance thequalityand safety level of the processing link， plays a keyrole in improving the data foundation， strengthening processtransparency，and perfecting collaborative governance.Based on the currnt situation of quality and safety management in agricultural product processing， this article analyzes the specific role of information traceabilityin the processing stage，sorts out the main existing problems，and proposes targeted optimization strategies from three aspects： system construction，technology application，and collaboration mechanism， with the aimof providing feasible references for improvingthe quality and safety management of agricultural product processing.
