Current Status of DON Contamination in Wheat Flour and Research Progress on Detoxification Technology

Abstract: Deoxynivalenol (DON)is one of the world's leading foodborne mycotoxins clasified as a Group 3 carcinogen.Based on the sampling data of wheat four product quality in recent years,this paper systematicaly sorts out the high-risk areas,high-risk links and current pollution situationofDON distribution in grain. Combined with the scientific research results at home and abroad,this paper reviews the research status ofDON detoxification technology in wheat flour frommultiple dimensions,including physical,chemical and biological detoxification methods,and compares and analyzes the research progress of different detoxification methods and their respective advantages and limitations.It furtherproposes theresearch directionand development trendof detoxification technologyinthe future, aiming to provide reference for scientificresearchand industrial application andother related fields,and promote the healthy development of food safety.
