Study on the Changes in the Quality of Rice During the Storage

Abstract: The changes in quality indicators (moisture content, whole rice yield, roughness,impurity content, yellow riceand off-grain brown rice)and storage indicators (color,odor,fatyacid value and tasting score) were analyzed during the storage period.The results showed that the fatty acid value of paddy grains tended to increase during the storage period,and the whole rice ratio,brown rice yield and tasting score tended to decrease,indicating that the quality and value of paddy grains would be reduced after long-term storage.Indicators of storage suitability of paddy should be determined by considering both quality indicators and storage indicators.
