Investigation Report on Hazardous Substances and Element Contents of Workshop Baijiu in Lishui city

Abstract： Taking 5O batches of workshop Baijiu from Lishui city as the research objects，the contents of harmful substances such as methanol，cyanide，formaldehydeand15 elements including As，Pb，Hgand Cd in he samples were analyzed.Meanwhile， taking 10 types offamous and high-quality Baijiu in circulation onthe market as the reference objects，the qualitysituation of workshop BaijiuinLishui citywas investigated. Conclusion：Theoverall qualityof workshop Baijiu inLishui city can meet the requirements of national standards.However，there are afew cases where the heavy metal element Pb is not up to standard. Formaldehyde is generally detected and has a relatively high content. Compared with famous and high-qualityBaijiu，there are significant gaps in terms ofqualityand safety， stability of the liquor body，and potential food safety risks.Relevant practitioners need to further improve product quality and strengthen supervision.
