摘 要:食品微生物检测对保障食品安全具有重要意义。本文概述了食品微生物检测技术的发展现状,重点阐述了聚合酶链式反应、酶联免疫吸附测定、生物传感器等常用检测技术的原理、步骤、应用情况,分析了各技术的优势和局限性,为食品微生物检测技术的选择提供参考。

Discussion on the Application of Food Microbial Detection Technology

Abstract: Food microbiological testing is of great significance for ensuring food safety. This paper summarizes the development status of food microbial detection technology, focuses on the principle, procedure and application of common detection technology such as polymerase chain reaction, enzyme-linked immunosorbent assay and biosensor, analyzes the advantages and limitations of each technology, and provides reference for the selection of food microbial detection technology.
