Research Progress on the Detection of Pesticide Residues in Fruits and Vegetables by HPLC-MS Technology

Abstract: With the continuous increase in people's attention to food safety,the issue of pesticide residues in fruits and vegetables has received growing atention. High-performance liquid chromatography-mass spectrometry (HPLC-MS)technology, with its high sensitivity,high selectivity,and powerful qualitative and quantitative capabilities,has demonstrated unique advantages in the field of pesticide residue detection.This paper elaborates on the principle andcharacteristicsofHPLC-MS technology indetail,systematicallyreviews its application status inthe detection of various pesticide residues in fruitsand vegetables,and deeplyanalyzes the currnt research challenges and future development trends,aiming to provide a reference for the further appication ofthis technology in ensuring the quality and safety of agricultural products.
