Research on Microbial Contamination and Detection Techniques in Pre Made Dishes

Abstract: In the current socialcontext, the paceof masslife is constantly accelerating,and pre made dishes,as a food type characterized by convenience,are gradually gaining popularity among consumers, with market demand showing a steady growth trend. However, microbial contamination problems occur frequently in the production, storage and transportation of ready-to-eat meals, which has become an urgent issue to be addresed in the industry. This article analyzes the sourcesand potential hazards of microbial contamination in pre made meals,and explores relevant detection technologies,inorder to provide reference suggestions for theprevention and control of microbial contamination in pre made meals,and to help the sustainable development of the pre made meal industry and protect consumers' health rights and interests.
