Abstract: The detection of food contaminants is very important to ensure food safety. With its high sensitivity, high selectivity and strong qualitative and quantitative ability, mass spectrometry has shown significant advantages in the field of food contaminant detection. This paper discusses the detection methods of food pollutants based on mass spectrometry and their advantages and future development direction, aiming to provide strong technical support and theoretical basis for improving the level of food contaminant detection and ensuring food safety.
