Abstract: Litopenaeus vannamei has become an important aquaculture species in the world due to its highprotein,low-fat nutritional characteristics and economic value,and is alsoan important ingredient loved by consumers.However, it is fastandeasyto blacken,so theapplication of preservation technology has become the key in the industrial chain.In this paper,the commonlyused preservation technologies at home and abroad are systematically sorted out, in order to provide a theoretical reference for industrial practice.

南美白对虾(Litopenaeusvannamei)又名凡纳滨对虾,是目前全球产量最高的对虾品种之一,其肌肉纤维细腻,含水量高( 75%~80% ),且具有脂肪含量低、无腥味,以及烹饪后口感鲜甜等优点,备受消费者喜爱。(剩余5274字)
