Analysis of the Application of High-Resolution Mass Spectrometry Technology in Food Testing

Abstract： In this paper， the principle， instrument type and application status of high-resolution mass spectrometry technology in the direction of pesticide residues，additive screening，food authenticity identification， etc.，are expounded，and in viewof the diffculties faced bythe high-cost instrument，strong matrix interference， and insuficient data matching，the countermeasures such as optimized pre-treatment， intelligent analysis and standardization construction are proposed. The purpose of this study is to provide theoretical support for the promotion of high-resolution mass spectrometry technology and the improvement of food testing system.
