Abstract: With the rapid development of the pre packaged food industry, ready-to-eat prefabricated dishes are highlyfavored by consumers due to their convenience,but the risk of microbialcontamination has become a key factor restricting the healthy development of the industry.This article focuses on the supply chain of ready-to-eat prefabricated dishes,deeply analyzes the microbial contamination risks in various links such as raw material supply, processing,storage,transportation,and sales,and proposes a complete microbial contamination risk monitoring systemconstruction strategy,including building a fullchain monitoring index system, integrating multiple monitoring technologies,laying outathree-dimensional monitoring network,and establishing a data-driven risk asessment and warning mechanism.Research hasshown that this systemcan efectively identify,evaluate,and prevent microbial contamination risks,providing theoretical and practical support for ensuring the quality and safety of ready-to-eat prefabricated dishes and promoting the standardized development of the industry.
