水果蔬菜中有机磷农药残留的检测方法研究

摘 要：有机磷农药在果蔬生产中的广泛使用引发了严重的食品安全问题。本文全面综述了水果蔬菜中常见的有机磷农药种类及其危害，重点介绍了4种主要检测方法，即气相色谱-火焰光度检测法、液相色谱-串联质谱法、酶抑制法和毛细管电泳法。通过对比论述分析各种方法的特点，为相关检测工作提供理论参考。

Study on the Detection Methods of Organophosphorus Pesticide Residues in Fruits and Vegetables

Abstract： The widespread use of organophosphorus pesticides in fruit and vegetable production has caused serious food safety issues. This article comprehensively reviews the common types and hazards of organophosphorus pesticides in fruits and vegetables， with a focus on four main detection methods： gas chromatography flame photometric detection， liquid chromatography tandem mass spectrometry， enzyme inhibition， and capillary electrophoresis. By comparing and analyzing the advantages and disadvantages of various methods， theoretical references are provided for related detection work.
