枯草芽孢杆菌发酵蟹壳产蛋白酶的研究

摘 要:本文通过单因素以及响应面试验优化枯草芽孢杆菌发酵蟹壳产蛋白酶的发酵条件。结果表明,枯草芽孢杆菌发酵蟹壳产蛋白酶的最优发酵条件为接种量18%、发酵温度40 ℃、培养基初始pH=9.0、发酵时间48 h、装液量120 mL。在此条件下,蛋白酶的酶活力为183.53 U·mL-1。

Research on the Production of Protease by Bacillus subtilis Fermentation of Crab Shell

Abstract: In this paper, single factor and response surface tests were used to optimize the fermentation conditions of Bacillus subtilis for producing protease from crab shell. The results showed that the optimal fermentation conditions of Bacillus subtilis fermentation were 18% inoculation amount, 40 ℃ fermentation temperature, pH=9.0 initial culture medium, 48 h fermentation time and 120 mL liquid loading. Under these conditions, the activity of protease was 183.53 U·mL-1.
