摘 要:本文分析了白酒生产过程中原料处理、发酵、蒸馏、储存及包装各环节的微生物污染问题。针对不同环节的污染特点,提出了优化原料管理、加强环境控制、规范操作流程等防治对策,以有效解决微生物污染问题。

Microbial Contamination Issues and Control Strategies in the Production Process of Baijiu

Abstract: This paper analyzes the microbial contamination problems in the raw material processing, fermentation, distillation, storage and packaging of Baijiu production. According to the pollution characteristics of different links, prevention and control measures such as optimizing raw material management, strengthening environmental control, and standardizing operating procedures are proposed to effectively solve the problem of microbial contamination.
