摘 要：本文分析影响菜籽油储存的因素，阐述菜籽油储存过程中的质量变化，探讨菜籽油安全储存的方法，旨在为菜籽油的安全储存提供合理的科学依据，以确保食用菜籽油的质量和食用安全，减少菜籽油在储存过程中的营养损失和安全隐患，从而延长菜籽油的安全储存期。

Abstract： This paper analyzes the factors affecting the storage of rapeseed oil， expounds the quality changes in the storage process of rapeseed oil， and discusses the safe storage methods of rapeseed oil， aiming to provide a reasonable scientific basis for the safe storage of rapeseed oil， so as to ensure the quality and edible safety of edible rapeseed oil， reduce the nutritional loss and safety risks of rapeseed oil in the storage process， so as to extend the safe storage period of rapeseed oil.
