Abstract: This paper describes the sources and hazards of common heavy metals in food, and focuses on the technical means commonly used in the detection of heavy metals in food at present, including atomic absorption spectrometry, X-ray fluorescence spectrometry, enzyme-linked immunosorbent assay and ultraviolet spectrophotometry, so as to provide a factual basis for judging whether food is safe. To ensure food safety and promote the healthy development of the food industry to provide beneficial help.
