摘 要：本文阐述了食品中常见重金属的来源与危害，并重点介绍了现阶段常用于食品重金属检测的技术手段，包括原子吸收光谱法、X射线荧光光谱法、酶联免疫吸附检测法和紫外分光光度法等，为判断食品是否安全提供事实依据，为保障食品安全、促进食品行业健康发展提供有益帮助。

Abstract： This paper describes the sources and hazards of common heavy metals in food， and focuses on the technical means commonly used in the detection of heavy metals in food at present， including atomic absorption spectrometry， X-ray fluorescence spectrometry， enzyme-linked immunosorbent assay and ultraviolet spectrophotometry， so as to provide a factual basis for judging whether food is safe. To ensure food safety and promote the healthy development of the food industry to provide beneficial help.
