魔芋深加工与食品开发研究进展

摘 要:魔芋是我國特色植物资源,含有丰富的葡甘聚糖,可进一步深加工成魔芋精粉、魔芋凝胶类食品、魔芋保健类食品等。本文综述了市面上常见的魔芋深加工类食品及魔芋食品开发研究进展,以期为魔芋深加工研究及产业化发展提供理论参考。

Research Progress of Konjac Deep Processing and Food Development

Abstract: Konjac is a characteristic plant resource in China, rich in glucomannan, can be further processed into konjac powder, konjac gel food, konjac health food, etc. This paper reviews the common konjac deep processing of food products on the market and the progress of research on the development of konjac food, in order to provide theoretical reference for the deep processing of konjac research and industrial development.
