食品中常见致病菌检测技术问题分析

摘 要:食品中常见致病菌种类多,因此开展常见致病菌检测是食品安全工作的重要环节。本文简单分析了当前常用的检测技术传统生化检测方法、免疫酶检测技术、PCR技术、基因芯片技术的发展应用及不足,为食品中常见致病菌检测技术的应用提供参考。

Analysis of Technical Problems in the Detection of Common Pathogenic Bacteria in Food

Abstract: There are many types of common pathogenic bacteria in food, so carrying out the detection of common pathogenic bacteria is an important part of food safety work. In this paper, we briefly analyze the development and application of the current commonly used detection technologies traditional biochemical detection methods, immunoenzymatic detection technology, PCR technology, and gene chip technology and their shortcomings to provide a reference for the application of common pathogenic bacteria detection technology in food.
