摘 要:随着人们生活节奏的加快,快捷、方便、高效的预制菜成为人们饮食追求的主流。水产品预制菜产业发展空间大,市场需求量大,但受微生物的影响,存在一定的食品安全问题。本文结合水产品预制菜的产业现状,分析水产品预制菜微生物污染的状况及影响因素,为水产品预制菜产业的安全、健康发展路径探索提供参考。

Analysis of Microbial Contamination Status and Influencing Factors of Prefabricated Vegetables in Aquatic Products

Abstract: As people’s pace of life accelerates, quick, convenient, and efficient pre-made dishes have become the mainstream pursuit of national dietary. Development space for the pre-made dishes industry is large, and the market demand is high. However, due to the influence of microorganisms, it faces food safety. This article combines the current state of the pre-made dishes industry to analyze the situation and influencing factors of microbial contamination in pre-made dishes. It provides a reference exploring the path of safe and healthy development of the pre-made dishes industry.
