Abstract： Food safety is a major issue related to the national economy and people’s livelihood， and it is crucial to establish a scientifically sound food testing system. This article provides an overview of the basic principles and instrument composition of high-performance liquid chromatography technology， with a focus on exploring its widespread application in the field of food detection. The article elaborates on the specific applications of high-performance liquid chromatography technology in pesticide residue detection， nutrient analysis， food additive identification， and fungal toxin screening.
