摘 要:基于近年来食品安全问题的严峻性,本文对国内外食品安全风险评估现状、评估方法及其在食品质量管理中的应用进行详细分析,并提出了优化食品安全管理的科技创新策略,如引入大数据、人工智能和区块链技术,旨在为食品安全领域提供理论支持和实践指导,提升食品安全管理水平。

Abstract: Based on the severity of food safety problems in recent years, this paper makes a detailed analysis of the current situation and evaluation methods of food safety risk assessment and its application in food quality management at home and abroad, and proposes scientific and technological innovation strategies to optimize food safety management, such as the introduction of big data, artificial intelligence and blockchain technology, aiming to provide theoretical support and practical guidance in the field of food safety and improve the level of food safety management.
