Processing Technology of Compound Dendrobium officinale Throat-Clearing Hard Candy

Abstract: Objective: To develop a cool and refreshing hard candy for clearing throat by using Dendrobium fcinale and other Homology of medicine and food.Method: In this study,compound extracts of Dendrobium fficinale,iratiagrosvenorii,Scapium wallichii,Lonicera japonicaandGlycyrrhiza uralensis wereetracted and concentrated.On the basis of single factor test results,orthogonal test was used to investigate the effects of the concentration of Dendrobium offcinale extract,sucrose,maltose syrupand water on the taste and formabilityof hard candies. Result: When the amount of pure water added is 25mL , the amount of sucrose added is 40g ,the amount of malt syrup added is 30g ,and the concentration of compound Dendrobium officinale extract is 6.0% ,the sensory score of the compound Dendrobium offcinale clear throat hard candy produced is 87.6 points.Conclusion: Thecompound Dendrobium officinaleclearinghardcandyobtained inthis studyiscoolandrefreshing,with moderatesweetness and stable proces, which provides a reference for the development of pharynx clearing products with homologous medicine and food.
