Detection and Analysis of Nutritional Components Characteristic of Ordos Fine-Wool Sheep Mutton

Abstract: Objective: To analyze the nutritional characteristics of Ordos fine wool mutton,and to provide reference for evaluating the nutritional qualityof Ordos fine wool muton. Method: 33 Ordos fine-wool sheep aged 2~4 years were selected as the research objects.The amino acids,5 conventional nutrients and 11 mineral elements inbiceps femoris,longissimus dorsi and triceps brachii were detected by national standard method.The dataof nutritional components in 3 parts of muscle were analyzed by SPSSPRO online data analysis platform.Result: The average value of essential amino acid/non-essential amino acid in biceps femoris,longissimus dorsiof Ordos fine wool mutton were higher than 60% ,the essential amino acid/total amino acid average value was close to 40% , and the proline content was significantly higher than that of other research reports.The cholesterol content was 40.41~42.77mg/100g. The contents of calcium, iron,manganese and zinc were higher than those of other varieties of mutton. Conclusion: The cholesterol content of Ordos fine wool muton is low; the content of calcium, iron, manganese and zinc is high.Amino acid composition is balanced, proline content is high. Only three amino acids and one mineral element were significantly different in biceps femoris,longissimus dorsi and triceps brachii (P<0.05 )
