透明质酸钠功能机理及在食品中的应用进展

摘 要:透明质酸钠(Sodium Hyaluronate,SH)是人体内部自然存在的物质,其对人体的生理功能具有调节作用,2021年成功入选我国新资源食品原料名单,具有广阔的市场发展空间。本文综述了透明质酸钠对人体的生理调节功能及近年来在食品应用的研究进展、未来研究方向,旨在充分发掘SH的潜力。

Functional Mechanism of Sodium Hyaluronate and its Utilization in Food

Abstract: Sodium Hyaluronate (SH) is a naturally occurring substance in the human body, which plays an indispensable role in regulating physiological functions of the human body. It has been successfully included in the list of new resource food ingredients in China in 2021, and has a broad market space for development. This paper reviews the physiological regulation function of SH on human body, and the research progress and future research direction of SH application in food in recent years, aiming to fully explore the potential of SH.

透明质酸钠(Sodium Hyaluronate,SH)在水中易水解为透明质酸(hyaluronic acid,HA),二者功能类似,但SH分子量更小,能被人体深层组织吸收,同时SH具有免疫抗炎、润滑关节、美容养颜等作用。(剩余8332字)
