Effects of 60C0-γ ray irradiation on color and antioxidant activity of purple cabbage

Abstract:Purplecabbagewasusedastheresearchobjecttoinvestigate thechangeofcolorandepidermalmorphologystructure,anthocyanin composition and antioxidant activity under 60Co-γ irradiation,so as to evaluate the effects of different irradiation doses on thephysiologicalandbiochemicalactivityofanthocyanininpurplecabbage.Theresultsshowedthatpurplecabbageanthocyaninswere sensitivetoradiation,andadoseof1kGycouldchangethevariouscomponentsofanthocyanins,buttherewasnosignificantdifer enceinthtotalcontentofanthocyanis.Iradiatiodidfecttheantioxidantcapacityofpurplecabbage,andthimpactofGyadiationwasmorepronouncedthanthatof2Gyirrdiation.Afteriradiation,theactivityofthekeyenzyePODintheanthocyanin metabolismpathwaysignificantlyincreased.ThrewasnosgnificantdferenceintheDPPHradicalscavengingabilityandPALactiityofpurplecabbageiradiatedwithadoseof2kGycomparedtononirrdiatedsamples.Theirradiatioof2kGyincreasedtebrightness axis parameter value of the leaves and made the leaf color brighter. In summary,2 kGy of 60Co-γ irradiation was the optimal dose forpreserving purplecabbageandcould delaythefading offresh cut vegetableand fruit products toacertain extent.
