Abstract：TocomparetheefftsofdiferentitrusCitrusreticulataBlanco）varietisandprocessngmetodsonthyieldandquality oftangerinepeel，theprocesingtechologyoftangeriepelwasimedtoeoptimed.EightcitusvaretsplantedinHubeiProvincewereusedastestobjects.Twopelpretreatmentmethods（scaldingand non-scalding）andfourdryingconditions（45，55，65 ΔC ， androomtemperatureshade-drying）wereadoptedforprocesing.Theindicatorsincludingpeelextractionrate，dryingmatterate， andhesperidincontentweremeasured.Theresultsshowedthatintermsofyieldfactors，thevarietyhadanexremelysignificantefct onthepelextractionrateoftangerinepeel，whilepretreatmenthadnosignificantfect；bothpretreatmentandvarietyhadanextremelysignificanteectonthedrymaterrateoftangerinepeel；theinteractionbetweenvarietyandpretreatmenthadanextremely significantefectonpeelextractionateutosignifcantefeondrmateratioRegadinghesperidincontentunderthemepretreatmentconditions，dryingtemperaturehadnosignificantefectonthehesperidincontentofthsamevariety；scaldingpretreatment significantlyreducedthehesperidincontentofDapu，RinanNo.1，andShijihong；diferentpretreatmentsanddryingtempeatures hadnosignificantefectonthehsperidincontentofDafenNo.4，GuoqngNo.1，Xingjin，andGuijing.Multifactoranalysisfvarianceshowedtatbothvarietyandpretreatmenthadanextremelysignificantefectonhesperidincontent，withvarietyhavigthegreatestefect，whiletemainefectofdryingtemperatureasnotsigificant；teinteractionbetweenvarietyandpretreatmenthadanextremelysignificantefectonhesperidincontent，andthethree-wayinteractionamongvariety，pretreatment，anddrying temperature was not significant.
