Abstract:Carot isoneof the most widelycultivated root vegetables worldwide,rich in various bioactivecompounds such ascarotenoids,vitamin A,andamino acids.Peeling is acrucial step inthedeepprocessing ofcarrots.However,current carrotpeeling machinery in China sufersfrom limited varietyandhighflesh lossrates.Toimprove peeling eficiency,this study designed acarrot peling device and conducted prototype testing.First,basicdimensional parameters,physical and mechanicalproperties,mechanicalcharacteristics,andoptimal pelingthicknessofcarrotsweredeterminedthrough agricultural material physical propertytests.Then,comparative experimentswereconductedtoestablish thatacuting tool edge angle of 10.7∘ ,a maximum cutting resistance of 1.68N/mm ,a cutting force range of 16-32N ,and a cutting angle of 45∘ yieldthe best cutting performance.Finally,the peeling performance of the devicewas evaluated at different conveyorroler speeds.And results indicate that the three main factors influencing the peling performance are the cuting tool edge angle,cuttingangle,and conveyor rolerspeed.The optimal peeling performance was achieved ataconveyor roller speed of 120r/min ,with a peeling rate of 90.72% ,peeling uniformity of 96.67% ,and flesh loss rate of 2.12% :
