摘 要:玉米肽是由玉米蛋白经特定酶水解成的小分子肽链,保留了部分氨基酸序列,有良好的溶解性与生物活性。本文探究了与金属离子螯合、糖基化及与其他物质复合等生物化学改性方法,并阐述改性后玉米肽在促进营养元素吸收、抗氧化以及解酒方面的生物活性,为玉米肽的研究提供参考。

Abstract: Corn peptides are formed by specific enzymatic hydrolysis of corn protein into small molecule peptide chains, retaining some amino acid sequences and exhibiting good solubility and biological activity. This article explores biochemical modification methods such as chelation with metal ions, glycosylation, and complexation with other substances, and elucidates the biological activities of modified corn peptides in promoting nutrient absorption, antioxidation, and sobering up, providing reference for the research of corn peptides.
玉米肽是经酶解或微生物发酵工艺,从玉米蛋白质中提炼出的小分子量肽的总称,其主要由满足人体营养需求的氨基酸组成,营养价值高,在抗肿瘤[1]、抗氧化[2]等方面表现出多种生物活性。(剩余7761字)
