摘 要:沙门氏菌是一种常见的人畜共患食源性病原体,对公众健康构成严重威胁,影响了食品行业的健康发展,已成为全球关注的焦点之一。本文综述分子生物学在沙门氏菌检测中的应用,以期为政府监管部门及第三方检测机构的研究提供参考。

Abstract: Salmonella is a common zoonotic food-borne pathogen, which poses a serious threat to public health and affects the healthy development of the food industry, and has become one of the focus of global concern. In this paper, the application of molecular biology in Salmonella detection is reviewed in order to provide reference for the research of government supervision departments and third party detection institutions.
