沙门氏菌的检测与预防研究进展

摘 要:沙门氏菌是一种广泛存在于食品中可感染人和动物的病原菌,沙门氏菌中毒在我国食源性中毒案例中占比较大。因此,控制好沙门氏菌的感染与传播至关重要。本文对沙门氏菌的生理学特性、分类、检测方法和防治办法进行探究,为防治食源性致病菌提供理论依据。

Abstract: Salmonella is a pathogen that widely exists in food and can infect people and animals. Salmonella poisoning accounts for a large proportion of food borne poisoning cases in China. Therefore, it is very important to control the infection and transmission of Salmonella. This paper explores the physiological characteristics, classification, detection methods and control methods of Salmonella, so as to provide a theoretical basis for the control of foodborne pathogens.

1 沙门氏菌概述
