中餐预制菜的营养价值与食品安全问题探析
摘 要:中餐预制菜是指经过初步加工处理后,消费者仅需简单加热或调味即可食用的中餐食品。随着其市场需求的增加,预制菜的营养成分保留及食品安全问题日益受到关注。本文系统分析中餐预制菜的核心营养成分及其在加工过程中的变化,探讨中餐预制菜中的常见食品安全问题,提出改善中餐预制菜营养价值与食品安全的对策。

Analysis on the Nutritional Value and Food Safety of Chinese Prepared Dishes

Abstract: Chinese prepared dishes refer to the Chinese food that can be eaten by consumers simply by heating or seasoning after preliminary processing. With the increase of market demand, the nutrition retention and food safety of prepared dishes have been paid more and more attention. This paper systematically analyzed the core nutrients of Chinese prepared dishes and their changes during processing, discussed the common food safety problems in Chinese prepared dishes, and proposed countermeasures to improve the nutritional value and food safety of Chinese prepared dishes.
