水果制品质量安全现状及风险控制研究

摘 要：本文基于湖北省近3年公布的省本级食品安全监督抽检数据，分析了水果制品的抽检不合格率变化情况、不合格品种和不合格项目，深入剖析了目前水果制品行业广泛存在的食品安全问题，并提出了相应的质量控制措施，以期为水果制品生产企业食品质量安全控制提供参考。

Research on the Current Status and Risk Control of Quality and Safety of Fruit Products

Abstract： Based on the provincial-level food safety supervision and sampling data published in Hubei province in the past three years， this paper analyzes the changes in the unqualified rate of fruit products， the types of unqualified fruit products and unqualified items. This paper provides an in-depth analysis of food safety issues in fruit products， and proposes quality control measures for fruit products， the purpose is to provide a reference for food quality and safety control for fruit products manufacturers.
