Effects of different maturity on the post-harvest storage quality of Grifola frondosa

Abstract：Toclarifytheefectsofdiferent maturityonthepost-harveststoragequalityofGrifola frondosa，ETpackaging box were used to package fruiting bodies with diferent maturity，and the weight lossrate，respirationrate，browning index，and textural quality were measured during storage.The results showed that under the condition of 4∘C ，different maturity had diferent degreesof influenceonthe weight lossrate，respirationrate，browning index，andtextural quality. Among them， the 70%-80% maturity demonstrated the best preservation effects，maintaining relatively high hardness， along with lower weight lossrate，respirationrate，and browning index after6daysof storage.The principalcomponent analysis extracted 3principal components，with acumulative contribution rateof 79.305% .Chewiness and hardness1 Were identifiedaskeyindicatorsafecting thestoragequalityofGrifolafrondosa.Theresearchresultscould provide theoretical basis and reference for the application of Grifola frondosa harvestingand preservation.
