Abstract：Asavegetablewithrichnutritionalandmedicinalvalue，bitergourdhasreceivedwidespreadattentioninthe fields offoodand medicine.This paper summarises the main functional components of biter gourd，includingsaponins， polysaccharides，flavonoids，etc.describesitsedicinalvalueinpoglycemia，antioxidantandanti-aging，ntcterial andanti-inflammatory，etc.，reviews thcurrntstatusoftheapplicationofbitergourdinfoodprocessing，andlooks for wardto the future development direction，aimingat providing references tothe furtherresearch andutilizationof biter gourd.
