动物性海产品中镉风险评估研究现状

摘 要:镉可对肾脏、肝脏、骨骼等造成损害,镉膳食暴露已成为国际关注的热点。本文通过回顾2011—2023年发表的相关文献,归纳总结动物性海产品中镉膳食暴露风险评估方法及评价结果,以期为动物性海产品中镉风险评估提供参考。

Research Status on Risk Assessment of Cadmium in Animal Seafood

Abstract: Cadmium can cause damage to kidney, liver, bones, etc., and dietary exposure to cadmium has become a hot topic of international concern. In this paper, the risk assessment methods and evaluation results of dietary exposure to cadmium in animal seafood were summarized by reviewing the relevant literature published from 2011 to 2023, in order to provide reference for the risk assessment of cadmium in animal seafood.
