HACCP在横县鱼生加工中的应用研究

摘 要:本文根据横县鱼生加工的过程,通过危害分析,确定横县鱼生加工过程的关键控制点,并给相应的关键控制点提出对应的预防控制措施,建立横县鱼生加工过程的HACCP管理体系,可将食品安全危害风险降到最低,以保证横县鱼生产品的质量,确保消费者的饮食安全。

Application of HACCP in Hengxian Yusheng Processing

Abstract: According to the process of Hengxian Yusheng, this paper determines the key control points of Hengxian Yusheng processing through hazard analysis, and puts forward corresponding prevention and control measures for the corresponding key control points. Establishing the HACCP management system of processing of Hengxian Yusheng can reduce the food safety hazards to the lowest level, so as to ensure the quality of Hengxian Yusheng products and ensure the food safety of consumers.
