基于过敏反应视角分析人体蛋白质消化吸收利用
摘 要:食物中的蛋白质经过物理性、化学性消化后,以氨基酸或寡肽的形式在小肠被吸收。进入人体内的氨基酸或寡肽,可以重新组成人体细胞组织结构并发挥重要生物学作用或生物学功能,部分寡肽也可能引发食物蛋白质过敏反应等不良影响。

Abstract: After the protein in food is digested physically and chemically, it is absorbed in the small intestine in the form of amino acids or oligopeptides. The amino acids or oligopeptides that enter the human body can recombine the structure of human cell tissues and play an important biological role or biological function. Some oligopeptides may also cause adverse effects such as food protein allergic reactions.
