高校餐厅食品安全快检项目研究

摘 要:高校餐厅承担着全校师生员工的供餐任务,食品安全问题关乎师生健康。本文分析了高校食堂餐饮安全中存在的问题,并充分调查市场上出售的快检试剂,结合省、市市场监督管理局每期公布的检测不合格食品种类和合格率,筛选出适合高校食堂内部管理时常开展的快检项目,为高校的餐饮安全监管提供意见和建议。

Research on the Food Rapid Test Items of College Canteen

Abstract: College cafeterias undertake the task of feeding all students, faculty and staff, and food safety issues are related to the health of students and faculty. This paper analyzes the problems in the safety of college canteen, and fully investigates the rapid detection reagents commercially available, combined with the types of unqualified food and the pass rate announced by the provincial and municipal market supervision administrations every issue, and screens out the fast inspection items that are suitable for the internal management of college canteens, and provide opinions and suggestions for the supervision of canteen safety in colleges.

当前,从“三聚氰胺”奶粉、“苏丹红”鸭蛋、“瘦肉精”猪肉、土坑酸菜到洗涤剂碗筷等各种食品安全问题层出不穷,国家和地方的市场监督管理部门发布的检测报告显示,致病性微生物、霉变食物和餐具不清洁是最常见的食品安全问题,尤其是碗、筷、盘等餐具上常可检测出大肠菌群(国标要求不得检出)和阴离子合成洗涤剂(以十二烷基苯磺酸钠计,国标要求不得检出)。(剩余3198字)
