自热技术在方便食品中的应用进展

摘要：自热食品具有方便、省力、快捷的特点，符合快消费时代的发展需要，自热技术是推动自热食品发展的关键，文章概述了自热技术的发展现状和原理、自热技术传热的规律、自热食品的原料预处理和包装保鲜，讨论了自热食品存在的安全问题及未来的发展趋势。

Abstract： Self-heating food is convenient， labor-saving and fast， which meets the development needs of the rapid consumption era. Self-heating technology is the key to promote the development of self-heating food. In this paper， the development status and principle of self-heating technology， the law of heat transfer of self-heating technology， the raw material pretreatment， packaging and preservation of self-heating food are summarized， and the safety problems and future development trend of self-heating food are discussed.
