摘 要:在高校食品质量安全管理中通过运用5M1E分析法,能够快速掌握食品质量安全管理的重点环节,为消除高校食堂食品质量安全管理可能出现的安全隐患提供对策依据,为高校食堂食品采购、加工及售卖等关键环节的把控提供借鉴经验,进而提升高校整体食品质量安全水平。

Application of 5M1E Analysis Method in Food Quality and Safety Management in Universities

Abstract: By using the 5M1E analysis method in the management of food quality and safety in universities, it is possible to quickly grasp the key links of food quality and safety management, provide countermeasures for potential safety hazards in the management of food quality and safety in university canteens, and provide reference experience for the control of key links such as food procurement, processing, and sales in university canteens, thereby improving the overall level of food quality and safety in universities.
