Research progress on influencing factors of anthocyanin content in colored potato

Abstract:Colored potato isrich inanthocyanins,andtheir tubersand processed products have brightcolors,rich nutrition,andhighmarketrecognition.Anthocyaninspossesscrtainealthbnefits,suchaseancingimmunefunctionand antioxidantactivity,whichcontribute positivelyto human health.The accumulation of anthocyanins incoloredpotatois comprehensivelyregulated bymultiple factors.Intrinsicfactors,including diferent varieties,tissuespecificity,and growth stages,directly determine anthocyanincontent.Meanwhile,external environmental factors,such as temperature, light,water,planthrmonesandpH,alsoinfluence thecontentofanthocyanins,andinducecorespondingchanges nthe expressionofstructural and regulatory genes.To further elucidate the factors influencing anthocyanin synthesis and itsunderliying mechanisms incolored potato,this papersummarizes the intrinsicandenvironmentalfactorsafectinganthocyanincontent,discuses existingchallenges inthestudyofitssynthesis mechanism,and proposes correspondingsolutions, aimingtoprovideatheoreticalfoundationforthe breedingand processingofhighanthocyanincoloredpotato.
