Study on Selenium Leaching Rate in Selenium-Rich Tea Soup

Abstract: Selenium is an essential trace element for human body, which cannot be synthesized by human body itself,so itneeds tobesupplementedbyexteralchannels.Seleniumrichteaisrich inselenium,andthehumanbody obtains selenium fromselenium rich tea mainly through the selenium dissolved in tea soup.The effcts of diffrent soaking time (5,10,15 min and 20min ), brewing temperature (70, 80, 90∘C and 100∘C ), tea-water ratio (1:40 , and brewing times (1, 2, 3 times) on the leaching rate of selenium were investigated.Theresults showed that the leachingrate of selenium in selenium-rich tea was the highest when the soaking time was 10min ,the brewing temperature was 100‰ and the ratio of tea to water was 1:60(g:mL) : And brew up to 2 times to achieve the purpose of selenium supplementation for the human body.
