我国预制菜产业的发展现状、面临问题及未来展望
摘 要:随着餐饮市场的降本增效和人们生活节奏的加快,预制菜成为众多家庭和餐饮企业的选择。本文概述了预制菜的定义和发展现状,并剖析了当前预制菜产业在原材料、标准制定、消费者认知和政策方面面临的问题,同时提出了解决这些问题的有效对策,以供参考。

The Development Status, Problems and Future Prospects of China’s Prefabricated Food Industry

Abstract: With the cost reduction and efficiency increase of the catering market and the acceleration of people’s life rhythm, prefabricated dishes have become the choice of many families and catering enterprises. This paper summarizes the definition and development status of prefabricated food, analyzes the current problems faced by the prefabricated food industry in terms of raw materials, standard setting, consumer cognition and policies, and puts forward effective countermeasures to solve these problems for reference.

1 预制菜概述
1.1 预制菜定义及特点
2024年3月18日,市场监管总局、教育部、工业和信息化部、农业农村部、商务部、国家卫生健康委六部门联合印发《关于加强预制菜食品安全监管 促进产业高质量发展的通知》(国市监食生发〔2024〕27号),明确预制菜也称预制菜肴,是以一种或多种食用农产品及其制品为原料,使用或不使用调味料等辅料,不添加防腐剂,经工业化预加工(如搅拌、腌制、滚揉、成型、炒、炸、烤、煮、蒸等)制成,配以或不配以调味料包,符合产品标签标明的贮存、运输及销售条件,加热或熟制后方可食用的预包装菜肴,不包括主食类食品,如速冻面米食品、方便食品、盒饭、盖浇饭、馒头、糕点、肉夹馍、面包、汉堡、三明治以及比萨等。(剩余4744字)
