生物法调控右旋糖酐分子量的研究进展
摘 要:右旋糖酐是一种可以应用到食品行业的生物大分子多糖,分子量大小及其分布与其性质及应用范围密切相关。探索能定向调控右旋糖酐分子量及分子量分布的方法,对目标分子量片段的右旋糖酐的制备具有重要的现实意义及理论价值。本文主要综述了生物法调控右旋糖酐分子量的研究进展。

Progress in Biological Regulation of Dextran Molecular Weight

Abstract: Dextran is a bio-macromolecule polysaccharide that can be applied to the food industry. The molecular weight and distribution of dextran are closely related to their properties and applications. Therefore exploring directional methods to control the dextran molecular weight and molecular weight distribution, has important practical significance and theoretical value for the preparation of dextran. In this paper, we reviewed the progress in the research on the biological methods of controlling the molecular weight of dextran.

右旋糖酐(Dextran)是一种微生物多糖,分子式为(C6H10O5)n,是由α-D-葡萄糖基聚合而成的高分子量同多糖,因为右旋糖酐聚合度的差别,所获得的右旋糖酐的分子量也不尽相同,不同分子量的右旋糖酐在食品行业有不同的应用。(剩余5017字)
