食品中甜味剂的前处理与检测技术现状
摘 要:甜味剂在食品工业中发挥着不可替代的作用。本文归纳了近年来检测食品中甜味剂的常用前处理方法(溶剂提取法、固相萃取法、透析法和沉淀法等)和检测技术(色谱检测技术、质谱检测技术、光谱检测技术和电化学检测技术等),为食品样品中甜味剂的前处理和检测方法的未来发展及广泛应用提供参考。

Current Status of Pretreatment and Detection Technology of Sweeteners in Food

Abstract: Sweeteners play an irreplaceable role in food industry. In this paper, the common pretreatment methods (solvent extraction, solid phase extraction, dialysis and precipitation, etc.) and detection techniques (chromatography, mass spectrometry, spectroscopy and electrochemical detection, etc.) for the detection of sweeteners in food in recent years were summarized, it provides reference for the future development and wide application of pretreatment and detection methods for sweeteners in food samples.
