食品中甜味剂的检测方法研究

摘 要:甜味剂作为赋予食品甜味的重要添加剂,广泛应用于各类食品中。然而,部分人工合成甜味剂与健康问题存在关联,因此对其进行准确、快速检测至关重要。本文综述了食品中甜味剂的检测方法,包括光谱检测法、电化学检测法、气相色谱法、离子色谱法和高效液相色谱法,以期为食品中甜味剂的安全监管提供技术参考。

Research on the Detection Method of Sweeteners in Food

Abstract: As an important additive to sweetening food, sweetener is widely used in all kinds of food. However, some artificial sweeteners have been linked to health problems, so accurate and rapid testing for them is critical. This paper reviews the detection methods of sweeteners in food, including spectral detection, electrochemical detection, gas chromatography, ion chromatography and high performance liquid chromatography, in order to provide technical reference for the safety monitoring of sweeteners in food.
