Abstract:Fresh fruits and vegetables containalarge amount of waterand rich nutrients,which are prone to spoilage during transportationandstorage,greatlyaffctingtheircommercialvalue.Thetraditional chemical preservationmethods have significant effects,but therearecertainsafetyhazards,and itsoperation is relativelycomplex,and thus canno longer meethe growing market demand.LED(lightemiting diode)dimming technology,asanewtypeof gren fruit and vegetablepreservationandstorage technology,hasatractedwidespreadattntioninthefoodindustry.Itcaneffctivelymaintainthecommercialappearanceoffruitsandvegetables,slowdownthedeclineinpostharvestqualityimprovethenutritional valueoffruitsandvegetables toacertainextent,andachievethegoal ofreducing storage loses and extending the shelflifeoffruitsandvegetables.Thisarticlereviews theimpactofLEDlight modulation technologyonthecolor, appearance,and nutritional qualityoffruitsand vegetables,aswellas its effectson fruitand vegetablemetabolism from monitoring thelevelsofantioxidantsystem,diseaseresistance,andenzyme activity.Italsolooks forward tothecurrent application statusand prospects ofLEDlight modulation technology,inorder toprovidenew ideas for innovationin fruit and vegetable preservation technologyand industrial development.
