Study on the Application of PCR Technique in Food Microbiological Detection

Abstract: PCR technology is widely used in the field of food microbiological detection because of its high sensitivity, high specificity and rapidity. This paper describes the common pathogenic microorganisms in food, the basic principle of PCR technology, the PCR detection method of common pathogenic microorganisms in food, discusses the application of PCR technology in food microbial detection, and introduces the development trend of PCR technology in food microbial detection.
