特殊膳食用食品中胆碱的检测研究进展

摘 要:胆碱是一种重要的水溶性微量营养素,通常被归为类维生素,它对维持细胞结构和功能以及神经递质乙酰胆碱合成至关重要。胆碱在特殊膳食用食品中有严格的添加要求,准确测定极其重要。本文对国内外特殊膳食用食品中胆碱检测方法中样品处理、仪器、试剂、自动化程度等进行比较分析,以期为检测人员提供理论指导。

Abstract: Choline is an important water-soluble micronutrient that is often classified as “vitamin-like.” It is critical for cell membrane structure and function and in synthesis of the neurotransmitter acetylcholine. Choline has been added in foods for special dietary users with a strict limitation to the amount of addition. Thus, accurate determination of choline has great significance. In this paper, the sample treatment, instrument, reagent and automation of the method for determination of choline in foods for special dietary users are brieflfly presented, so as to provide a reference for testing personnel.

特殊膳食用食品是为满足特殊的身体或生理状况和(或)满足疾病、紊乱等状态下的特殊膳食需求,而专门加工或配方的食品,包括婴幼儿配方食品、婴幼儿辅食食品、特殊医学用途配方食品以及其他特殊膳食食用食品(辅食营养补充品、孕妇、乳母营养补充食品等)[1]。(剩余7367字)
