食品中有机磷农药残留检测技术研究
摘 要:有机磷农药杀虫谱宽、药效明显,可极大地提高农作物产量,保证粮食丰产丰收。但是,农药的过度使用会导致其在农作物表面、土壤和水源中残留,经过食物链进入人体后,会对神经系统中的乙酰胆碱酯酶产生抑制作用,造成乙酰胆碱代谢紊乱,损害人体健康。因此,有必要对食品中有机磷农药残留的检测方法进行研究。

Abstract: Organophosphorus pesticides have wide insecticidal spectrum and obvious efficacy, which can greatly improve crop yield and ensure grain harvest. However, the overuse of pesticides will lead to residues on the surface of crops, soil and water sources, and after entering the human body through the food chain, it will inhibit theacetylcholinesterase in the nervous system, resulting in the disorder of acetylcholine metabolism and damage human health. Therefore, it is necessary to study the detection methods of organophosphorus pesticide residues in food.
